As our cacao trees mature at Finca Chocolat and production increases we are stretching the limits of the fermentation facility we built in 2019. This is an excellent problem to have and we are excited to be building a new facility. This new fermentation facility will allow us to ferment 20,000+ lbs of wet cacao at once – a 5x increase over our old facility.
This structure will house a tiered wooden box system we will add once the building itself is complete. The materials for the roof arrive later this week and we are truly looking forward to breaking this in for the 2025 season!
